  • 1 cup gluten-free breadcrumbs
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 1/4 cup milk (or dairy-free alternative)
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, gluten-free breadcrumbs, onion, bell pepper, garlic, milk, egg, salt, and pepper.
  3. Mix until well combined.
  4. Transfer the mixture to a loaf pan and shape it into a loaf.
  5. Spread ketchup on top of the meatloaf.
  6. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).
  7. Let it rest for 10 minutes before slicing and serving.
