Healthy Gluten Free Meatloaf – Dairy Free

A flavorful and comforting meatloaf recipe that is both gluten-free and dairy-free, perfect for families and gatherings.

  • 1 lb lean ground beef (90/10)
  • 1 large egg
  • 1 tablespoon Dijon mustard
  • 3 tablespoons ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup gluten-free breadcrumbs
  • 1 tablespoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup ketchup (for glaze)
  • 1 tablespoon maple syrup (for glaze)
  • 1 tablespoon brown sugar (for glaze)
  • 1 tablespoon Worcestershire sauce (for glaze)

Instructions

  1. Preheat the oven to 350°F and line a loaf pan with parchment paper. Spray the pan with cooking spray to prevent sticking.
  2. Add all meatloaf ingredients to a large bowl and mix well using your hands or a fork, careful not to overmix.
  3. Form the meatloaf mixture into the bottom of the loaf pan in an even layer.
  4. Bake for 45-60 minutes, until the internal temperature reaches 160°F.
  5. Mix together the glaze ingredients in a small bowl and spread it over the top of the meatloaf.
  6. Increase the oven temperature to 400°F and return the glazed meatloaf to the oven for a few more minutes to crisp the top and edges.
  7. Remove from the oven, let cool for a few minutes, then lift from the pan, slice, and serve with your favorite side dishes.

Notes

Use fresh, high-quality ground beef for best flavor. Store leftovers in an airtight container for up to 4 days. Can be frozen for up to 3 months.
