Delicious and nutritious pancakes made with sweet potatoes, perfect for a healthy breakfast.

Ingredients

  • 1 cup mashed sweet potatoes
  • 1/2 cup gluten-free flour
  • 1/4 cup almond milk (or any dairy-free milk)
  • 1 tablespoon maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon coconut oil (for cooking)

Instructions

  1. In a mixing bowl, combine the mashed sweet potatoes, gluten-free flour, almond milk, maple syrup, baking powder, cinnamon, and salt.
  2. Mix until well combined and the batter is smooth.
  3. Heat a non-stick skillet over medium heat and add a little coconut oil.
  4. Pour 1/4 cup of batter onto the skillet for each pancake.
  5. Cook for 3-4 minutes on one side until bubbles form, then flip and cook for another 2-3 minutes until golden brown.
  6. Repeat with the remaining batter, adding more coconut oil as needed.
  7. Serve warm with your favorite toppings.

Notes

  • Make sure the sweet potatoes are well mashed for a smooth batter.
  • Adjust the sweetness by adding more or less maple syrup according to your taste.
  • These pancakes can be stored in the refrigerator for up to 3 days.
