Ingredients

  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced apples
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the honey (or maple syrup), applesauce, eggs, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the diced apples and nuts if using.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.
