Healthy Almond Flour Cornbread

  • 1 cup cornmeal
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 cup almond milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix together the almond flour, cornmeal, baking powder, and salt.
  3. In another bowl, whisk together the eggs, almond milk, honey (or maple syrup), and melted coconut oil.
  4. Combine the wet ingredients with the dry ingredients and stir until well mixed.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let it cool for a few minutes before slicing and serving.

Notes

  • For a sweeter cornbread, increase the amount of honey or maple syrup.
