A creamy and colorful macaroni salad that’s gluten-free and packed with flavor, perfect for summer gatherings.

Ingredients

  • 8 oz elbow macaroni
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1 cup diced celery
  • 1/2 cup chopped red onion
  • 1/2 cup sweet pickle relish
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 hard-boiled eggs, chopped
  • 1/2 cup diced bell pepper (optional)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Cook the macaroni according to the package directions; drain and rinse under cold water.
  2. Combine in a large bowl mayonnaise, sour cream, Dijon mustard, apple cider vinegar, garlic powder, salt, and pepper.
  3. Add the cooled macaroni, celery, red onion, sweet pickle relish, chopped eggs, and bell pepper (if using), and mix well.
  4. Taste and adjust the seasoning as needed.
  5. Cover and refrigerate for at least 1 hour before serving.
  6. Garnish with fresh parsley before serving.
