A delightful fusion of traditional gumbo flavors with comforting fried rice, perfect for gluten-sensitive eaters.

Ingredients

  • 1 cup Long Grain White Rice
  • 1.5 cups Chicken Broth
  • 1 cup Kielbasa or Andouille Sausage
  • 1 cup Shrimp
  • 1 medium Onion
  • 1 medium Green Bell Pepper
  • 2 stalks Celery
  • 3 stalks Green Onions
  • 2 tablespoons Creole Seasoning
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Ground Turmeric
  • to taste Salt
  • to taste Pepper
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 Eggs

Instructions

  1. Rinse the Long Grain White Rice under cold water until the water runs clear.
  2. Cook the rice according to package instructions, using Chicken Broth instead of water for added flavor. Set aside.
  3. Chop the Onion, Green Bell Pepper, Celery, and Green Onions, keeping the white and green parts of the green onions separate.
  4. Heat the Extra Virgin Olive Oil in a large skillet over medium heat.
  5. Sauté the chopped Onion, Green Bell Pepper, and Celery until they are softened (about 5 minutes).
  6. Add the Kielbasa or Andouille Sausage to the pan, cooking until browned (approximately 3-4 minutes).
  7. Incorporate the Shrimp and cook until they turn pink (about 2-3 minutes).
  8. Stir in the cooked rice, making sure to break apart any clumps.
  9. Sprinkle in the Creole Seasoning, Garlic Powder, Ground Turmeric, Salt, and Pepper. Mix well.
  10. Push the rice mixture to one side of the skillet.
  11. Crack the Eggs into the empty side and scramble them until fully cooked before mixing them into the rice.
  12. Fold in the sliced green parts of the Green Onions just before serving for added freshness.
