  • 1 cup whole wheat flour
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/2 cup almond milk
  • 1/4 cup molasses
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, mix together the whole wheat flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the applesauce, honey (or maple syrup), almond milk, and molasses.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. If using, fold in the chopped walnuts.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool before serving.

Notes

  • For a vegan version, use maple syrup instead of honey.
  • Store leftovers in an airtight container for up to 3 days.
  • This cake can be served warm or at room temperature.
