  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) enchilada sauce
  • 1 cup corn kernels
  • 1 cup shredded cheese
  • 2 cups cooked rice
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground beef over medium heat.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the black beans, enchilada sauce, corn, cooked rice, chili powder, cumin, salt, and pepper.
  4. Bring the mixture to a simmer and cook for about 5 minutes.
  5. Sprinkle the shredded cheese on top and cover the skillet until the cheese is melted.
  6. Serve hot and enjoy your meal!
