Ground Beef Enchilada Skillet

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) enchilada sauce
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
  3. Stir in the black beans, enchilada sauce, corn, chili powder, cumin, salt, and pepper.
  4. Bring the mixture to a simmer and cook for about 5 minutes, allowing the flavors to meld.
  5. Sprinkle the shredded cheese on top and cover the skillet until the cheese is melted.
