A vibrant side dish featuring grilled zucchini with Parmesan cheese and fresh herbs, perfect for summer gatherings.

Ingredients

  • 2-3 medium zucchini (about 1 pound / 450 grams)
  • 2 tablespoons extra virgin olive oil
  • 2 cloves fresh garlic, minced
  • ¼ cup (25 grams) grated parmesan cheese
  • 2 tablespoons fresh herbs (a mix of chopped rosemary, thyme, and basil)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Rinse zucchinis and trim the ends. Cut into ¼-inch thick slices lengthwise.
  2. Incorporate olive oil, minced garlic, chopped herbs, sea salt, and black pepper in a mixing bowl. Stir well.
  3. Add zucchini slices to the bowl and gently toss to coat. Let sit for 5-10 minutes.
  4. Heat a grill pan over medium-high heat.
  5. Arrange zucchini in a single layer on the grill. Cook for 3-4 minutes per side until grill marks form and zucchini is tender.
  6. Sprinkle parmesan cheese evenly over zucchini while on the grill. Cover to melt cheese for 1-2 minutes.
  7. Remove zucchini from the pan, optionally sprinkle with lemon zest and extra herbs. Serve warm.

Notes

Use freshly grated Parmesan for better melting and flavor.
