  • 1 medium zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 slices of whole grain bread
  • 8 ounces fresh mozzarella cheese, sliced
  • Fresh basil leaves

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the sliced zucchini, bell peppers, and mushrooms with olive oil, salt, and pepper.
  3. Grill the vegetables for about 5-7 minutes, or until tender and slightly charred.
  4. On one slice of bread, layer the grilled vegetables and mozzarella cheese.
  5. Add fresh basil leaves on top of the cheese.
  6. Top with another slice of bread and grill the sandwich for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  7. Remove from the grill, slice in half, and serve warm.
