- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup mushrooms, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 slices of whole grain bread
- 8 ounces fresh mozzarella cheese, sliced
- Fresh basil leaves
- Preheat the grill to medium-high heat.
- In a bowl, toss the sliced zucchini, bell peppers, and mushrooms with olive oil, salt, and pepper.
