A flavorful blend of smoky grilled chicken thighs with sweet heat from honey, paired with a fresh corn salad.

Ingredients

  • 1 pound boneless, skinless chicken thighs
  • ¼ cup olive oil
  • 2 tablespoons hot honey
  • 1 teaspoon freshly grated lemon zest
  • 6 ears of sweet corn, kernels removed from the cob
  • ¼ cup sour cream
  • 2 tablespoons freshly squeezed lime juice
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Whisk together olive oil, hot honey, lemon zest, salt, and pepper.
  2. Add chicken thighs and marinate for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken for 6-8 minutes per side, or until cooked through and slightly charred.
  5. Combine corn kernels, sour cream, lime juice, salt, and pepper in a separate bowl, and toss gently.
  6. Let chicken rest for a few minutes before slicing.
  7. Serve grilled hot honey chicken alongside the fresh corn salad.
