A comforting one-pan meal loaded with Mexican-inspired flavors, featuring chicken, rice, corn, and salsa verde.

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup salsa verde
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup corn (frozen or canned)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat some oil in a large skillet over medium heat. Add diced onion and bell pepper, and sauté until softened.
  2. Add minced garlic and diced chicken, cooking until the chicken is browned.
  3. Stir in cumin and season with salt and pepper.
  4. Add rice, corn, salsa verde, and chicken broth. Stir to combine.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes or until rice is cooked and liquid is absorbed.
  6. Fluff with a fork and garnish with fresh cilantro before serving.
