Greek Lemon Chicken Soup

  • 1 lb chicken breast, boneless and skinless
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 large carrots, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the chicken breast and cook until fully cooked, about 15-20 minutes.
  3. Remove the chicken, shred it, and set aside.
  4. Add the diced carrots, chopped onion, and minced garlic to the pot. Cook until the vegetables are tender.
  5. Stir in the orzo pasta and cook according to package instructions.
  6. Return the shredded chicken to the pot.
  7. Add the lemon juice, lemon zest, oregano, salt, and pepper. Stir well.
  8. Serve hot, garnished with fresh parsley.

Notes

  • For a creamier soup, add a splash of heavy cream before serving.
