A refreshing and gluten-free cake combining the tartness of grapefruit with the nutty crunch of poppy seeds.

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup grapefruit juice
  • 1 tablespoon grapefruit zest
  • 1/4 cup poppy seeds
  • 1/2 cup Greek yogurt or sour cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream together the softened butter and sugar in a large bowl until light and fluffy.
  4. Beat in the eggs, one at a time.
  5. Mix in the grapefruit juice and zest until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with Greek yogurt, until just mixed.
  7. Fold in the poppy seeds gently.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
