  • 8 oz goat cheese, softened
  • 1/4 cup cream cheese, softened
  • 1/4 cup fresh herbs (such as basil, parsley, or chives), chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the mini peppers in half lengthwise and remove the seeds.
  3. In a mixing bowl, combine the goat cheese, cream cheese, fresh herbs, minced garlic, salt, and pepper.
  4. Fill each pepper half with the cheese mixture.
  5. Place the stuffed peppers on a baking sheet and bake for 15-20 minutes, or until the peppers are tender and the cheese is slightly golden.
  6. Remove from the oven and let cool slightly before serving.
