A delicious and healthy white chicken chili that is both gluten-free and compliant with Whole30 guidelines.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and garlic, sauté until translucent.
  3. Add chicken breasts and cook until browned on both sides.
  4. Stir in white beans, chicken broth, green chilies, cumin, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  6. Remove chicken, shred it, and return it to the pot.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • For added spice, consider adding jalapeños.
  • This chili can be made in a slow cooker for convenience.
  • Leftovers can be stored in the refrigerator for up to 3 days.
