  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1 cup bell peppers, thinly sliced
  • 1 cup lettuce leaves, shredded
  • Fresh herbs (mint, cilantro, or basil)
  • Dipping sauce (low FODMAP soy sauce or peanut sauce)

Instructions

  1. Prepare all vegetables by washing and cutting them into thin strips.
  2. Soak rice paper wrappers in warm water for about 10-15 seconds until soft.
  3. Place a wrapper on a clean surface and layer a small amount of each vegetable and herbs in the center.
  4. Fold the sides of the wrapper over the filling and roll tightly from the bottom up.
  5. Repeat with remaining wrappers and filling.
  6. Serve with your choice of low FODMAP dipping sauce.
