A refreshing and healthy gluten-free vegan chicken salad perfect for spring dinners.

Ingredients

  • 2 cups chickpeas, cooked and mashed
  • 1/2 cup celery, diced
  • 1/2 cup red onion, diced
  • 1/2 cup vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large bowl, combine the mashed chickpeas, celery, and red onion.
  2. Add the vegan mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mix well.
  3. Fold in the chopped parsley.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve on a bed of greens or in a gluten-free wrap.
