Deliciously fudgy and healthy brownies made with avocado, perfect for spring.

Ingredients

  • 1 ripe avocado
  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips (dairy-free)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a mixing bowl, mash the ripe avocado until smooth.
  3. Add the maple syrup, melted coconut oil, and vanilla extract to the avocado and mix well.
  4. In another bowl, combine the almond flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the dark chocolate chips.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let cool before cutting into squares and serving.
