Delicious gluten-free cookies inspired by the classic Twix bar, perfect for spring desserts.

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the almond flour, coconut flour, brown sugar, granulated sugar, baking soda, and salt.
  3. Add the softened butter, egg, and vanilla extract to the dry ingredients and mix until well combined.
  4. Fold in the chocolate chips.
  5. Using a cookie scoop, drop dough onto a baking sheet lined with parchment paper.
  6. Make a small indentation in the center of each cookie and fill it with caramel sauce.
  7. Bake for 12-15 minutes or until the edges are golden brown.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
