- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a bowl, mix the gluten-free chocolate cake mix, cocoa powder, sugar, melted butter, eggs, and vanilla extract until smooth.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cake cool completely before removing it from the pan.
- In a separate bowl, melt the dark chocolate and let it cool slightly.
- Whip the heavy cream until soft peaks form, then fold in the melted dark chocolate.
- Spread the dark chocolate mousse over the cooled cake.
- Repeat the process with the milk chocolate and white chocolate, layering each mousse on top of the previous one.
- Chill the cake in the refrigerator for at least 4 hours before serving.
