A delicious and easy Italian dessert recipe that is gluten free.

Ingredients

  • 1 cup strong brewed coffee, cooled
  • 3 tablespoons coffee liqueur (optional)
  • 3 large eggs, separated
  • 1/2 cup granulated sugar
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • Gluten free ladyfingers (or sponge cake)
  • Cocoa powder for dusting

Instructions

  1. In a shallow dish, combine the brewed coffee and coffee liqueur.
  2. In a bowl, whisk the egg yolks and sugar until pale and creamy.
  3. Fold in the mascarpone cheese until smooth.
  4. In another bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the mascarpone mixture.
  6. Dip the gluten free ladyfingers in the coffee mixture briefly and layer them in a dish.
  7. Spread half of the mascarpone mixture over the ladyfingers.
  8. Repeat the layers with the remaining ladyfingers and mascarpone mixture.
  9. Cover and refrigerate for at least 4 hours or overnight.
  10. Before serving, dust with cocoa powder.

Notes

  • For a stronger coffee flavor, use espresso instead of brewed coffee.
  • Make sure all ingredients are certified gluten free.
  • Can be made a day in advance for better flavor.
