A delicious and hearty gluten-free version of the popular Texas Roadhouse smothered chicken, topped with savory gravy and cheese.

  • 4 boneless, skinless chicken breasts
  • 1 cup gluten-free chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup diced green bell pepper
  • 1/4 cup gluten-free flour
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a skillet, heat olive oil over medium heat and sauté the onions and bell peppers until soft.
  4. Remove the vegetables and set aside. In the same skillet, add the chicken breasts and cook until browned on both sides.
  5. Sprinkle gluten-free flour over the chicken and stir to coat.
  6. Add the chicken broth and bring to a simmer, then return the vegetables to the skillet.
  7. Top the chicken with shredded cheddar cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
