A delicious and easy gluten-free taco casserole perfect for a spring dinner.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 2 cups gluten-free tortilla chips
  • 2 cups shredded cheese
  • 1 cup salsa
  • 1/2 cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned.
  3. Add the black beans, corn, and taco seasoning to the skillet and mix well.
  4. In a baking dish, layer half of the tortilla chips, followed by half of the beef mixture, half of the salsa, and half of the cheese.
  5. Repeat the layers with the remaining ingredients.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Garnish with chopped green onions before serving.
