A delicious and healthy quiche made with sweet potatoes and ground turkey, perfect for a gluten-free diet.

  • 2 medium sweet potatoes, peeled and grated
  • 1 cup ground turkey
  • 4 large eggs
  • 1 cup milk (or dairy-free alternative)
  • 1 cup spinach, chopped
  • 1/2 cup onion, diced
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the onions until translucent.
  3. Add the ground turkey and cook until browned.
  4. In a large bowl, combine the grated sweet potatoes, cooked turkey mixture, spinach, eggs, milk, garlic powder, salt, and pepper.
  5. Pour the mixture into a greased pie dish.
  6. Bake for 30-35 minutes or until the quiche is set and lightly golden on top.
  7. Let it cool for a few minutes before slicing and serving.
