A delicious and healthy alternative to traditional ice cream, made with cottage cheese and free from gluten and sugar.

Ingredients

  • 2 cups cottage cheese
  • 1/2 cup unsweetened almond milk
  • 1/4 cup natural sweetener (like stevia or erythritol)
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh fruit (optional)

Instructions

  1. In a blender, combine the cottage cheese, almond milk, sweetener, and vanilla extract.
  2. Blend until smooth and creamy.
  3. If desired, fold in fresh fruit.
  4. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  5. Transfer to a container and freeze for at least 2 hours before serving.
