  • 1 cup coconut oil, solid
  • 1 cup sugar
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the gluten-free flour, baking soda, and salt.
  3. In another bowl, cream together the solid coconut oil and sugar until fluffy.
  4. Add the almond milk, vanilla extract, and almond extract to the creamed mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
