A light and creamy dessert made with fresh strawberries and mascarpone cheese, perfect for gluten-free diets.

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, combine the sliced strawberries with 2 tablespoons of powdered sugar and let them sit for 10 minutes to release their juices.
  2. In another bowl, whisk the mascarpone cheese, remaining powdered sugar, and vanilla extract until smooth.
  3. In a separate bowl, whip the heavy cream until soft peaks form.
  4. Gently fold the whipped cream into the mascarpone mixture until well combined.
  5. Layer the strawberry mixture and mascarpone mousse in serving glasses.
  6. Chill in the refrigerator for at least 1 hour before serving.
