  • 1 cup gluten-free cake flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups ripe strawberries, sliced

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the gluten-free cake flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the sliced strawberries gently.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cake cool before serving.
