A light and fluffy gluten-free cake topped with fresh strawberries, perfect for any occasion.

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced
  • Whipped cream for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, mix the almond flour, coconut flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the eggs, applesauce, and vanilla extract.
  4. Combine the wet and dry ingredients until well mixed.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Once cooled, top with sliced strawberries and whipped cream if desired.
