  • 1 cup gluten-free all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup unsweetened applesauce
  • 1/4 cup milk (or dairy-free alternative)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the mashed bananas, sugar, applesauce, milk, and vanilla extract.
  3. In another bowl, whisk together the gluten-free flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chopped strawberries gently.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
