A delicious and easy recipe for gluten-free steak quesadillas, perfect for a quick weeknight meal or a comforting spring dinner.

Ingredients

  • 2 cups cooked steak, sliced
  • 4 gluten-free tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup bell peppers, sliced
  • 1/2 cup onions, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced onions and bell peppers, sauté until softened.
  3. Season with salt and pepper.
  4. Place a tortilla in the skillet, layer with steak, sautéed vegetables, and cheese.
  5. Top with another tortilla and cook until golden brown, then flip and cook the other side.
  6. Remove from skillet, slice, and serve warm.
