A healthy and delicious gluten-free dish featuring spinach and white beans.

Ingredients

  • 2 cups fresh spinach
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the white beans, salt, black pepper, and red pepper flakes. Stir to combine.
  4. Cook for about 5 minutes, stirring occasionally.
  5. Add the fresh spinach and cook until wilted, about 2-3 minutes.
  6. Remove from heat and stir in lemon juice before serving.
