Ingredients

  • 1 cup gluten-free cornmeal
  • 1/2 cup shredded cheese
  • 1/2 cup cooked and crumbled chorizo
  • 1/4 cup diced jalapeños
  • 1/4 cup chopped cilantro
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup water
  • Oil for frying

Instructions

  1. In a mixing bowl, combine the cornmeal, cheese, chorizo, jalapeños, cilantro, cumin, chili powder, salt, and pepper.
  2. Add water gradually until the mixture is well combined and holds together.
  3. Form the mixture into small balls.
  4. Heat oil in a frying pan over medium heat.
  5. Fry the balls until golden brown on all sides.
  6. Remove from oil and drain on paper towels.
  7. Serve hot with your favorite dipping sauce.

Notes

  • Adjust the spice level by adding more or fewer jalapeños.
  • These can be made ahead of time and reheated in the oven.
  • Serve with guacamole or salsa for extra flavor.
