Gluten Free S’mores Cookie Bars

Delicious Gluten Free S’mores Cookie Bars combining graham crackers, chocolate, and marshmallows in a chewy cookie bar form.

  • 1 1/2 cups gluten free graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup marshmallow fluff

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a medium bowl, mix together the graham cracker crumbs, melted butter, brown sugar, granulated sugar, egg, vanilla extract, and salt until well combined.
  3. Press half of the cookie dough mixture into the bottom of the prepared baking dish.
  4. Layer the marshmallow fluff evenly over the cookie base, then sprinkle the chocolate chips on top.
  5. Take the remaining cookie dough and crumble it over the chocolate chips.
  6. Bake for 20-25 minutes, or until the top is golden brown.
  7. Allow to cool before cutting into squares. Enjoy your delicious gluten free dessert!

Notes

Allow bars to cool completely before cutting for clean squares. Store in an airtight container for up to a week.
