Gluten Free S'mores Cookie Bars

A deliciously chewy treat that combines the classic flavors of s’mores in a gluten-free cookie bar.

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips
  • 1/2 cup crushed graham crackers (gluten-free)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the mini marshmallows, chocolate chips, and crushed graham crackers.
  7. Spread the batter evenly in the prepared baking pan.
  8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before cutting into bars and serving.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For extra gooeyness, add more marshmallows on top before baking.
  • Ensure all ingredients are certified gluten-free.
