A delicious and easy gluten-free recipe for a flavorful slow cooker chicken dish with tomato and basil, perfect for spring dinners.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup fresh basil leaves, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil

Instructions

  1. In a slow cooker, add the diced tomatoes, onion, garlic, salt, and pepper.
  2. Place the chicken breasts on top of the tomato mixture.
  3. Pour the chicken broth and olive oil over the chicken.
  4. Sprinkle the chopped basil on top.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
  6. Shred the chicken with two forks and stir it back into the sauce before serving.
