A delicious and easy gluten-free recipe for street corn chicken made in a slow cooker.

  • 2 lbs chicken breasts
  • 1 can (15 oz) corn, drained
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup mayonnaise
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped cilantro
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the corn, diced tomatoes, and red onion on top of the chicken.
  3. In a separate bowl, mix together the mayonnaise, feta cheese, cilantro, chili powder, cumin, salt, and pepper.
  4. Pour the mayonnaise mixture over the chicken and vegetables in the slow cooker.
  5. Cover and cook on low for 6-8 hours or until the chicken is cooked through and tender.
  6. Shred the chicken with two forks and mix everything together before serving.
