Gluten-Free Slow Cooker Corned Beef & Cabbage Stew

A hearty and flavorful stew made with corned beef and cabbage, perfect for a comforting meal.

Ingredients

  • 2 pounds corned beef brisket
  • 4 cups chopped cabbage
  • 4 medium carrots, sliced
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 4 cups beef broth
  • 1 tablespoon mustard seeds
  • 1 teaspoon black peppercorns
  • 2 bay leaves
  • Salt to taste

Instructions

  1. Place the corned beef brisket in the slow cooker.
  2. Add the chopped cabbage, sliced carrots, diced potatoes, and chopped onion on top of the beef.
  3. Pour the beef broth over the vegetables and beef.
  4. Add the mustard seeds, black peppercorns, bay leaves, and salt.
  5. Cover and cook on low for 8-10 hours or until the beef is tender.
  6. Remove the beef, slice it, and serve with the vegetables and broth.
