A delicious and hearty beef dish cooked slowly in a gluten-free sauce, perfect for any occasion.

Ingredients

  • 2 pounds beef chuck roast
  • 1 cup gluten-free beef broth
  • 1 cup diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce (gluten-free)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the beef chuck roast with salt and pepper, then sear it in the skillet until browned on all sides.
  3. Transfer the seared beef to the slow cooker.
  4. Add the chopped onion, minced garlic, diced tomatoes, beef broth, Worcestershire sauce, and thyme to the slow cooker.
  5. Cover and cook on low for 8 hours or until the beef is tender.
  6. Once cooked, shred the beef with two forks and mix it with the sauce before serving.
