Delicious and healthy shrimp burritos that are gluten-free, perfect for a quick meal.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 avocado, sliced
  • 1 cup salsa
  • 4 gluten-free tortillas
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the brown rice according to package instructions.
  2. In a skillet, heat a little oil over medium heat and add the shrimp.
  3. Season the shrimp with cumin, chili powder, salt, and pepper.
  4. Cook the shrimp until they are pink and opaque, about 3-4 minutes.
  5. Warm the gluten-free tortillas in a separate pan.
  6. Assemble the burritos by placing rice, black beans, corn, shrimp, avocado, and salsa on each tortilla.
  7. Wrap the tortillas tightly and serve immediately.
