A delicious and comforting gluten-free shepherd’s pie casserole perfect for St. Patrick’s Day celebrations.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 4 cups mashed potatoes (gluten-free)
  • 1 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add the chopped onion, diced carrots, and minced garlic to the skillet. Cook until the vegetables are tender.
  4. Stir in the frozen peas, beef broth, tomato paste, Worcestershire sauce, salt, and pepper. Simmer for 5-10 minutes.
  5. Transfer the beef mixture to a baking dish and spread it evenly.
  6. Top with the mashed potatoes, spreading them out to cover the beef mixture completely.
  7. If desired, sprinkle shredded cheddar cheese on top of the mashed potatoes.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  9. Let it cool for a few minutes before serving.
