A delicious and gluten-free recipe featuring chicken and vegetables roasted in garlic butter.

  • 4 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 cup baby carrots
  • 1 cup bell peppers, sliced
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix melted butter, minced garlic, thyme, paprika, salt, and pepper.
  3. Place chicken breasts on a sheet pan and brush with the garlic butter mixture.
  4. Add the broccoli, carrots, and bell peppers around the chicken on the sheet pan.
  5. Drizzle the remaining garlic butter over the vegetables.
