A refreshing and vibrant salad featuring shaved carrots and daikon, dressed in a flavorful sesame ginger dressing.

Ingredients

  • 2 large carrots, peeled and shaved
  • 1 medium daikon radish, peeled and shaved
  • 2 tablespoons sesame oil
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce (gluten-free)
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons sesame seeds
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shaved carrots and daikon.
  2. In a separate bowl, whisk together the sesame oil, grated ginger, rice vinegar, soy sauce, and honey or maple syrup.
  3. Pour the dressing over the shaved vegetables and toss to combine.
