- 2 cups gluten-free all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup milk (or dairy-free alternative)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup dried fruit (optional)
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the gluten-free flour, sugar, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to mix until it resembles coarse crumbs.
- In a separate bowl, whisk together the milk, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in the dried fruit.
- Turn the dough out onto a floured surface and gently knead it a few times until it comes together.
- Pat the dough into a circle about 1 inch thick and cut into wedges or use a biscuit cutter to cut out rounds.
- Place the scones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
- Allow to cool slightly before serving. Enjoy!
Notes
- For a sweeter scone, increase the sugar to 1/2 cup.
- These scones can be frozen before baking; just add a few extra minutes to the baking time if baking from frozen.
- Experiment with different add-ins like chocolate chips or nuts for variety.
