A delicious and creamy casserole that combines the flavors of French onion soup with tender potatoes, perfect for a comforting side dish.

Ingredients

  • 4 large potatoes, thinly sliced
  • 2 large onions, thinly sliced
  • 2 cups gluten-free vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Gruyère)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and sauté the onions until they are caramelized, about 15-20 minutes.
  3. In a mixing bowl, combine the vegetable broth and heavy cream, then season with salt and pepper.
  4. In a greased baking dish, layer half of the sliced potatoes, followed by half of the caramelized onions, and half of the cheese.
  5. Repeat the layers with the remaining potatoes, onions, and cheese.
  6. Pour the broth and cream mixture over the layered casserole.
  7. Cover with foil and bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until golden and bubbly.
  8. Garnish with fresh thyme before serving.
