- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and sauté the onions until they are caramelized, about 15-20 minutes.
- In a mixing bowl, combine the vegetable broth and heavy cream, then season with salt and pepper.
- In a greased baking dish, layer half of the sliced potatoes, followed by half of the caramelized onions, and half of the cheese.
- Repeat the layers with the remaining potatoes, onions, and cheese.
- Pour the broth and cream mixture over the layered casserole.
- Cover with foil and bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until golden and bubbly.
- Garnish with fresh thyme before serving.
