- In a large skillet, heat olive oil over medium heat.
- Add diced potatoes and cook until they start to soften, about 10 minutes.
- Add chopped onion and bell pepper, cooking until vegetables are tender.
- Push the vegetables to the side and add the gluten-free sausage to the skillet.
- Cook the sausage until browned and cooked through, breaking it up as it cooks.
- Mix everything together and season with salt and pepper.
- Serve hot, garnished with fresh herbs if desired.
