Gluten-Free Sausage Hashbrown Breakfast Casserole

  • 1 pound gluten-free sausage
  • 1 package frozen hashbrowns
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the dish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or oil.
  2. In a skillet over medium heat, cook the gluten-free sausage until browned. Remove from heat and set aside.
  3. In a large bowl, whisk together the eggs and milk. Add the salt and pepper.
  4. Add the cooked sausage, frozen hashbrowns, diced onions, bell peppers, and shredded cheese to the egg mixture. Stir until well combined.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake in the preheated oven for about 45-50 minutes or until the casserole is set and golden on top.
